Strawberry Angel Food Dessert Recipe

Equipment: Long Loaf Pan, 10"x 3" heart pan

1 white angel food cake mix
1 3oz. package of strawberry jello
1 cup boiling water
1 cup of cold water
1 tbsp. fresh lemon juice (optional)
1 cup whipping cream
2-3 tbsp. fresh or frozen strawberries pureed

1 cup whipping cream
1-2 tbsp. icing sugar
1/8 tsp. vanilla
1 cup shredded coconut
2 - 3 drops soft pink food color

1. Bake angel food cake mix according to package directions in an angel food cake pan. (Long loaf angel food cake pan makes it easy to cut off brown edges of cake)
2. Wrap and freeze cooked angel food cake.
3. While frozen trim off all outside brown edges.
4. Cut complete cake into 1/2"-3/4" cubes.
5. In a medium bowl place jello powder and add 1 cup boiling water. Stir to dissolve. Add 1 cup of cold water, lemon juice and puree.
6. Pour into flat dish (glass baking dish) and refrigerate until partially set to the consistency of egg whites (about 30-40 minutes).
7. Return to bowl, whip till frothy.
8. Whip 1 cup whipping cream. Fold whipped cream into gelatin mixture.
9. Line and completely cover a medium size bowl or 9" round cake pan with seran wrap.
10. Begin alternating layers of cubed angel food and gelatin mixture.
11. Refrigerate and when set, unmold.
12. Cover with an additional cup of whipped cream. Add icing sugar & vanilla.
13. Place coconut in plastic bag and add a few drops of food color. Shake to color.
14. Sprinkle colored coconut over whip cream icing.
